Ingredients

  • 1 pound chicken breast, cut into bite-size pieces
  • 1 pound beef steak, cut into bite-size pieces
  • 1 pound peeled and deveined shrimp
  • 1 can of diced tomatoes
  • 1 can of black beans
  • 1 can of corn
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon of chili powder
  • 1 tablespoon of ground cumin
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1/4 cup of chopped fresh cilantro

Instructions

  1. In a large pan, heat up the olive oil over medium-high heat.
  2. Season the chicken and beef with the chili powder, ground cumin, salt, and black pepper.
  3. When the oil is hot, add the chicken and beef to the pan and brown on all sides. Remove from the pan and set aside.
  4. Add the onions, garlic, red and green bell peppers to the pan and sauté until they are softened.
  5. Add the diced tomatoes, black beans, and corn to the pan and stir to combine.
  6. Add the cooked chicken and beef back to the pan and stir to combine.
  7. Finally, add the peeled and deveined shrimp to the pan and cook until pink and cooked through.
  8. Serve hot and garnish with chopped cilantro.

Notes

  • This recipe can be easily adjusted to personal preferences. Consider using different vegetables, spices or protein sources to suit your taste.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months.
